Thai Carrot Salad

With the new year and Christmas on our doorstep once again I thought we would start a new section on the site. Food!

The recipe uses cashews but I substituted  toasted almond slivers.

4 cups grated carrot
1/2 cup raw unsalted cashews
3 teaspoons fish sauce
2 tablespoons lemon juice
1 clove garlic crushed
1 small fresh chilli finely chopped (I took out the seeds)
1/2 teaspoon brown sugar

Place cashews (or almonds) & carrot into a large bowl.  Put fish sauce, lemon juice, garlic, chilli and sugar into a scew top jar and shake until  well combined.  Pour the dressing over the salad and toss the ingredients together.

Simple but very tasty!
